I always remember the time I had to have breakfast on the ride to school every single morning. Lets say it was from first grade all the way through middle school, OMG- eight years, I should have not started counting… That actually scared me a little bit! Oh, well! That was how long my mother had to cook and pack the food for my brother, my sister and myself. Thanks, mom!
I forgot to mention where I am from, why my mother had to prepare breakfast for us every morning, and also why we had to “pretend” to enjoy it in the car! Trust me, sometimes I cried while eating!
If you have been in Bangkok, Thailand before you would know the answer. Top ranked in the world for worst traffic. It would take us no less than 2 hours to get to school, not because of the distance but because of the bloody traffic. Don’t get me wrong, we still have lots of beautiful places and wonderful foods waiting for you to discover and amaze your taste buds!
If I was able to beat the worst traffic in the world and survive the same old food during those school years, you should be able to survive your crazy day too. Don’t worry I got you covered, I am here today to help you #girlbosses to actually enjoy your breakfast with plenty of nutrients and as quick as possible!
“BREAKFAST IS IMPORTANT.” “DON’T SKIP YOUR BREAKFAST.” “YOUR BRAIN WON’T WORK IF YOU DON’T HAVE BREAKFAST.” Are those yelling statements TRUE?
Well yes, those are totally true, not because I am saying it, but because there is plenty of research on the benefits of breakfast. Just to name a few, “Eating breakfast has long-term health benefits. It can reduce obesity, high blood pressure, heart disease and diabetes.” This research is from National Health Service. Which means that, you DO need breakfast girlfriends.
Aside from grabbing a banana and a cup of coffee, you can actually make your meal in a short period of time, like less than five minutes. Today I’m sharing with you three quick breakfast menus to start your fabulous day with! The tip is, make sure you have all of your ingredients ready for the whole week. Go shopping on Sunday and plan your breakfast ahead.
Now let’s get right into it! Quick Breakfast recipes:
SALMON ON FLOATY
“Open Faced Smoked Salmon Bagel”
Bagel (I’m using a blueberry bagel.)
Garnish (Red Onions, Capers, Parsley and Black Peppers)
1. Cut bagel in half (use half for today and keep the other half for tomorrow).
2. Spread on cream cheese.
3. Layer salmon on the bagel.
4. Garnish with red onions, capers, parsley and black pepper.
PURPLE POWER PROTEIN SMOOTHIE
“Blueberry & Blackberry Protein Smoothie”
½ cup of Blueberry
½ cup of Blackberry
1 Tbsp. of Protein Powder
1 Tbsp. of Maple Syrup
1 Tbsp. of Almond Butter
1 cup of Ice
Garnish (Blueberry, Blackberry and Coconut Chips)
1. Put all ingredients into a blender.
2. Blend all ingredients together.
3. Pour into a glass.
4. Top with Blueberry, Blackberry and Coconut Chips.
LAVA BREAD CUP
“Bread Cup and Lava Egg”
1 slice of Multigrain Bread
1 slice of Cheddar Cheese
1 slice of Ham or bacon
Garnish (Parsley and Cherry Tomato)
1. Put the bread in a small bowl; make sure it forms around the edges.
2. Crack an egg on top of the bread.
3. Place sliced hams/ bacons over the egg.
4. Place sliced Cheddar cheese on top on the hams/ bacons.
5. Put it in the microwave for 1 minute if you want the yolk runny or 2 minutes for fully cooked.
6. Garnish with cherry tomato and parsley.
