Garlic White Wine Prawns and Fresh Linguine Recipe

You know how life goes. I’ve been filling my days with blogger meetings, date nights, writing and yoga lately, and I don’t know if I should be proud or ashamed of this, but I haven’t cooked a meal in almost three weeks! It has certainly been takeout central over here… I’m actually quite a wonderful cook, (if I don’t say so myself!) so it was definitely time for me to spoil the boyfriend with a beautiful home cooked meal.

Garlic white wine sauce is such a simple and elegant dish to prepare. Throw in some prawns and fresh homemade pasta and now you’re talking! If you don’t want to go through the hassle of making your own pasta, you can usually find delicious handmade alternatives at your local farmer’s market or Whole Foods. This is the perfect meal to cook for a romantic date, to show off to some girlfriends, or to treat yourself. The best part? It only takes half an hour to prepare!

Prawns and Linguine Recipe

3 bundles of fresh linguine
1/2 pound of peeled prawns
1/2 cup of salted butter
3/4 cup of Chardonnay
1 Tbsp chopped garlic
1 whole squeezed lemon
1/4 cup finely chopped parsley
1/2 tsp salt
dash of olive oil

  1. Slowly melt your butter with the garlic and salt in a deep pan on a low heat setting.
  2. Fill a large pot halfway with water and add a pinch of salt, a dash of olive oil, and the fresh pasta, and place on the stove on medium heat. Cook your pasta to your liking. I prefer al dente, which only takes about ten minutes to cook with a medium thickness linguine.
  3. Stir the Chardonnay into the melted butter with a whisk, adding your lemon and prawns to simmer covered. After a few minutes, flip the prawns to the other side.
  4. Drain your cooked pasta and toss it with the chopped parsley and a little bit of olive oil.

 

Plate artfully and garnish with parsley to serve.
